Chocolate is one of the world’s favorite foods, yet very few people know anything about the main ingredient – cocoa; where it grows, how it is grown, how is it processed on the farm after harvesting, and then how (and where) cocoa beans are transformed into chocolate. The journey spans the entire globe and covers topics in history, botany, biochemistry, fermentation, physics, chemistry, economics, ethics – and more. This exploration of chocolate will also include a tasting. Clay Gordon was the world's first professional chocolate critic in 2001. He is the creator & moderator of TheChocolateLife, and is the Chief Chocolate Correspondent for TheChocolateLife and TheChocolateWire.
